Heartwarming Chili


Ingredients2 table spoons olive oil

1 med red onion chopped

1 large baked sweet potato

4 cloves garlic

2 cans of diced tomatoes

1 can of kidney beans

1 can of black beans

1 can of pinto beans

2 cups vegetable broth

1 bay leaf

1 1/2 teaspoon red wine vinegar

1 tablespoon chili powder

1 1/2 teaspoons paprika

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon oregano

Greek yogurt or sour cream, Green onion, Cheddar, and Cilantro For garnish

1. Simmer in a large pot the onion, garlic, salt, and pepper with the olive oil for about 10 min or until tender.

2. Add the sweet potato, chili powder, cumin, paprika, oregano, and bay leaf, for about 1-2 minutes. mashing the sweet potato as you combine.

3. If you are a meat eater add some turkey or beef burger to the pan, and cook till brown.

4. add the canned tomatoes and beans with all their juices. Stir to combine, bring to a simmer, stirring occasionally for 30 min.

5. Once all is cooked fill your serving bowls with your meat and chili, then top with your toppings of choice. I top with Greek yogurt and cilantro. The hubby and kiddos prefer sour cream, cheddar,, and green onions.
