Green Goddess Pasta

The other day I was craving pasta like crazy. After putting together a meal plan for the week and finding inspiration from Instagram and Pinterest, I made this delicious healthy pasta!

This was so quick and easy that it was ridiculous. I love when meals are easy and quick to put together that still taste delish! The flavors from the sauce were mouthwatering. I did not have to run to the store to make this either.

I have all the greens growing in the garden, so I went out and snipped off what I thought I needed. Washed them all up and laid them out to pat down the excess water. After I got the excess water off them, I put them all in my ninja blender.

I then added the olive oil, frozen avocado chunks, and honey. Our honey is from a local beekeeper who has been in business for years now. I blended this all till it was a smooth consistency. I then threw in 1/2 the feta and gave it one last spin around to finish mixing everything together.

Once the noodles were cooked to perfection, I took the sauce and added it directly to the pot with the hot noodles. The warmth from the hot noodles warmed up the sauce without having to turn the burner back on.

I plated up each serving of pasta. Then sprinkled some stir-fry seasoning and feta chunks on top for extra flavor and aesthetic.

My family was a little reluctant to try it due to the full-on green color, but when they did, they loved it. So if you have kids who are into Marvel comics, call it HULK pasta. You can tell them they will get all the best nutrients from this HULK pasta to build strong muscles like HULK or SHE-HULK!

I loved it so much that I had a helping for dinner, Breakfast the next day, and lunch. I just could not get enough of it.

Ingredients:

A large handful or two of;

Chives

Spinach

Arugula

Honey 1 Tbsp

Olive Oil 3 Tbsp

Avocado 1 Med

Feta 1 8 oz container

Gluten-free Penne 1 Box

Stir fry seasoning (sesame seeds, red pepper flakes, pepper, minced garlic, minced onion)


1. Start your pot of water salt if desired. When water comes to a boil, put the pasta in and cook to desired doneness.

2. In a blender, put all greens, honey, and oil and blend until smooth. Once smooth, add half the 8 oz container to the blender and mix again.

3. Once pasta is cooked and sauce blended, toss both together and top with feta crumbles and stir fry seasoning mixture.
