Creamy chicken and wild rice soup
Ingredients:
chicken 2-3 breasts, 4-6 tenderloins, or leftovers from a broasted chicken
3 carrots sliced
3 stalks of celery chopped
salt
pepper
chives (optional), about a handful
1/4 cup wild rice
8 oz package of cream cheese
4 cups chicken broth or stock
2 tbsp minced onion
2 tsp minced garlic
1 tsp celery seed
1 bay leaf
Makes: 12 servings
Directions:
1. Slice your celery and carrots
2. place chicken in the crockpot, then add in the remaining ingredients minus the wild rice
3. Place crockpot on low for 8 hours or high for 4 hours
4. After the soup is halfway cooked, add the 1/4 cup of wild rice and stir.
5. Once the soup is complete, take the chicken and place it on a plate to shred.
6. After the chicken has been shredded, place it back in the crockpot and sit for 30 minutes before serving.
Tip: Freeze extras to pull out on those busy nights when you need to just warm something up.
