Cherry Nut Muffins
Ingredients:
1/2 cup dried cherries
1/2 cup Pumpkin seeds
1/2 cup Walnuts, chopped
1/2 cup Almond milk
3/4 cup of Applesauce
2 1/2 cups of gluten-free flour or baking mix
1/4 cup of maple syrup
1 teaspoon vanilla extract
If using flour and not a baking mix
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1. Preheat oven to 375
2. Milk almond milk, applesauce, maple syrup, and vanilla in a bowl.
3. If using flour, mix all dry ingredients in another bowl.
4. Add the dry ingredients to the wet ingredients.
5. Once combined, fold in the cherries and nuts.
6. In a non-stick or lined cupcake pan, fill 3/4 full with batter.
7. Bake for 20-25 minutes, remove from oven and let cool 15-20 minutes.
Enjoy as a breakfast or dessert!
